Peanut Butter Cup Energy Balls

Ingredients

6 pitted medjool dates 

1 can black beans, drained and rinsed 

½ cup peanut butter 

2 cups old fashioned oats 

¼ cup cocoa powder

Directions

  1. Put dates in a small bowl and pour boiling water over. Soak for 10 minutes, then drain, reserving liquid. 
  2. In food processor, blend dates, beans and peanut butter until smooth. Add oats and cocoa powder and continue blending to desired consistency (If the mixture is dry, add some of the reserved date liquid). 
  3. Scoop into balls using a melon scooper, then freeze until ready to eat!
