No Cook Mediterranean Couscous

Ingredients

  • 1 cup whole grain couscous
  • 1 cup cold water
  • 6 oz. roasted red peppers, chopped
  • 1 bunch scallions, thinly sliced
  • 3 good handfuls of mixed fresh herbs, chopped
  • 2 cups cherry tomatoes or other vegetables, chopped
  • 1 can low sodium canned beans, rinsed and drained
  • juice of 1 lemon
  • 2 Tablespoons olive oil
  • Salt and freshly ground black pepper
  • Red wine vinegar

Instructions

  1. Place the couscous in a bowl with the cold water. This will start to soften the couscous and you will see the water disappear as it soaks in.
  2. Toss in peppers, scallions, tomatoes, herbs and beans.* Mix well.
  3. Add the olive oil and lemon juice and toss well.
  4. Taste and season with salt and pepper and a couple of dribbles of red wine vinegar for a slight twang.

*Here’s where you can be creative and add any chopped veggies you like and/or have on hand
