Ingredients
- 1 cup whole grain couscous
- 1 cup cold water
- 6 oz. roasted red peppers, chopped
- 1 bunch scallions, thinly sliced
- 3 good handfuls of mixed fresh herbs, chopped
- 2 cups cherry tomatoes or other vegetables, chopped
- 1 can low sodium canned beans, rinsed and drained
- juice of 1 lemon
- 2 Tablespoons olive oil
- Salt and freshly ground black pepper
- Red wine vinegar
Instructions
- Place the couscous in a bowl with the cold water. This will start to soften the couscous and you will see the water disappear as it soaks in.
- Toss in peppers, scallions, tomatoes, herbs and beans.* Mix well.
- Add the olive oil and lemon juice and toss well.
- Taste and season with salt and pepper and a couple of dribbles of red wine vinegar for a slight twang.
