I had everything all ready to go: the homemade tofurky, stuffing, vegetables, all ready to roast. I realized my oven was taking a long time to preheat…and then the temperature started plummeting. No oven, no Thanksgiving dinner!

A quick pivot. Odds and ends from the freezer. The mashed potato could still go on. Thirty minutes later - with the holiday meal packed up and refrigerated - my husband and I each had a plate with half of two different veggie burgers, some leftover coleslaw and mashed potato. It was still tasty and reminded me how blessed we are. After all, not everyone has a fall-back meal. We had just spent the morning cleaning up after the 4,000 Thanksgiving meals volunteers prepared for Westchester's hungry.

The appliance repairman arrived the next day, fixed the oven and we got our “real” Thanksgiving dinner on Friday.
